Super Easy Ricotta Gnocchi Recipe

This is a super easy gnocchi recipe that even younger kids can make by themselves (except boiling the gnocchi, of course). It’s quick to make, no measuring needed, and it’s yummy!

Ok, let’s start!

You need a cup of ricotta cheese (don’t forget to get rid of the excess water), flour, a pinch of salt, an egg and some grated parmesan cheese. We didn’t have parmesan cheese, so we just used whatever cheese we had in the fridge.

Just dump everything in a big bowl and mix with a spoon! You’d want the dough to be soft and sticky… Try not to put in too much flour if you want your gnocchi to be light, soft and fluffy.

Coat your hands with flour, get some dough and roll it to make small logs. Cut the logs into small pieces.

Bring a pot of water to boil. Put a bit of cooking oil in the water so that the gnocchi won’t stick to each other. Put the gnocchi in, boil for around 2 minutes or until the gnocchi floats on the surface.

Drain the gnocchi, and you can eat it with any pasta sauce you like. Serve immediately, since it would start to harden if left to cool down. We actually took this advice seriously, I remembered to take a picture only after we finished the dinner. So, no picture of our chicken hearts in tomato sauce gnocchi….
